The problem with trying to lose weight in the traditional manner, that is, by controlling calorie intake..... 'calories in must be less than calories out' .......and eating a low fat diet...which we now know is NOT a good idea!....may worked well for some people for a certain period of time, but alas, as soon as there was a return to 'normal' eating, any weight lost usually returned with a vengeance and dragging a few extra pounds with it.....and so we have the 'yo-yo' diet.....disheartening and frustrating!
Psychologically, it seems, that part of being a human means that whatever we are doing without prays on our minds constantly, and so we are subject to cravings once more......we always seem to want what we can't have.......or rather shouldn't have!
However, eating in the keto style turns this 'calorie restriction = weight-loss' theory on its head and allows us to what could been deemed as 'indulging' and enjoy a diet so high in fat it would give a low fat guru a stroke just thinking about it! This method of eating controls, or even eliminates from our food choices, those carbohydrates that fluctuate our blood glucose levels leaving us hungry and craving even more.
Can you imagine being able to enjoy delicious chocolate mousse, crisply roasted duck, mature cheddar's and the creamiest of blue cheeses all while loosing weight? well by following the keto way you can. Even though you would be restricting certain items from your everyday meals, after a few days you will not even miss what you once relied on and....you will not look back!
The keto style way of eating is satisfying and you will discover that eating foods naturally high in fat will keep you fuller for longer and you can wave adieu to those cravings! Unlike calorie restrictive diets I believe it is impossible to over-eat while following the keto style....well in my experience anyway.
The list of foods you can enjoy while eating a la keto is extensive and it is amazing the dishes you can come up with while adhering to the basic rules. I have invented for myself an Irish cream liqueur chocolate mousse....recipe to follow soon....a strawberry cheesecake...crisp base and all! and numerous other dishes, this is a 'diet' that is never boring!
This Cheesy Chicken dish contains all those good elements of keto....lots of full flavored vegetables, protein from the chicken and a generous helping of creamy coconut and blue cheese, served up with a baby spinach leaf and cucumber salad. There's no reason why the whole family can't enjoy this sort of meal....you could even add some Thai spices to the coconut milk for a whole new taste sensation.

You will need.......feeds 1 person...
1 breast of chicken....pre-cooked
30g white onion
1 yellow pepper
1/4 of a red pepper
50 g mushrooms
1 clove garlic
50 g aubergine
2 tablespoons coconut milk
your choice of blue cheese
parmesan cheese if desired
olive oil
sea salt, fresh black pepper
how to....
- cut the yellow pepper in half length-ways, scoop out any seeds and place the half shell in an oven proof dish
- dice the onion, red pepper and the remaining yellow pepper and set aside
- dice the cooked chicken and set aside
- clean and dice the mushrooms, dice the aubergine leaving the skin on....set these aside
- heat a couple tablespoons of olive oil in a deep pan, add the onions and peppers and cook lightly without colour for a few moments
- add the chicken pieces and cook for 2 minutes...if you think the pan is getting dry you can add a touch of water and let the chicken steam a little.....we are basically just re-heating the chicken rather than cooking it
- add the mushrooms and aubergines and continue cooking for another 2 minutes or so
- add in the coconut milk, the clove of garlic crushed, then season with salt and pepper
- heat through really well and allow the coconut milk to reduce a little and get thick
- remove the pan from the heat and spoon the filling into the yellow pepper shell, let it fall around the sides if it won't all fit in.
- top with some crumbled blue cheese and grate or shave a little parmesan over the top too if you like
- bake in a pre-heated oven 180oC until the cheese is molten and bubbling and the yellow pepper has begun to wilt and soften
- serve your Cheesy Chicken up with some baby spinach leaves and cucumber batons tossed in an olive oil and lemon juice dressing.
This dish could work just as well with ham, bacon, pork....maybe even salmon...now there's a thought!
